Abstract

As a high value-added raw material, collagen is increasingly popular among health-conscious consumers and manufacturers in the food

As a high value-added raw material, collagen is increasingly popular among health-conscious consumers and manufacturers in the food, pharmaceutical, nutrition and biomedical sectors. Jiayi Bio is the leading solution provider in the collagen field. We offer a wide range of different collagen peptides and food gelatin products for various industries and consumers around the world.

Collagen peptides and gelatin are safe to eat and have been used in food and medicine for centuries. As a pure protein, natural collagen and collagen peptides can be extracted from fish, cattle and pigs.

Basic knowledge review
- What's collagen?
Collagen is a natural protein derived from the Greek word for glue. It is one of the most abundant proteins in mammals, accounting for 25%-35% of the total protein content in the body, and is the fibrous connective tissue that connects our bodies together. Collagen consists of three long chains containing more than 1,000 amino acids wrapped around each other to form a triple helix, a unique structure that produces long, slender fibril. Collagen has a high content of hydroxyproline, glycine and proline. Due to this atypical amino acid structure, we have found 28 kinds of collagen, distributed in different parts of the body, and divided into several groups according to their composition structure. That is, fibrous collagen (types I, II, III, V, XI) or non-fibrous collagen (which accounts for most of the other types).

Collagen and human history
Collagen has a long history of application in human history. Hundreds of years ago, collagen was extracted from cattle or pig bone soup to make the most of the animal's body parts and avoid waste. Our ancestors quickly realized the value of this protein. In the 12th century, the abbe and scholar Hildegard von Bingen recommended drinking a broth made from calf hooves (containing collagen) to relieve joint pain. Napoleon was convinced, too, and supplied his troops with this nutritious drink.

As a result, gelatin extracted from collagen quickly gained widespread application, not only in food, but also in industry. With its unique physicochemical properties and functions, collagen is widely used in many fields.
